  • 2 pieces ripe bananas, mashed Overripe is best for sweetness
  • 1/2 cup honey or maple syrup Use maple syrup for a vegan option
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups finely ground oats Can substitute with flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • Pinch salt
Add-ins
  • 1 piece apple, peeled and diced Any variety you prefer
  • 1/2 cup chopped walnuts Can toast for extra flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line your pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, mashed bananas, melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.
  3. Gently mix in the finely ground oats, baking powder, baking soda, cinnamon, and salt until just combined.
Baking
  1. Fold in the diced apples and chopped walnuts until they are evenly distributed throughout the batter.
  2. Pour the batter into the prepared pan and bake for about 40-45 minutes, or until a toothpick comes out clean.
  3. Allow the cake to cool slightly before serving.

Notes

Best served with yogurt or vanilla ice cream. Can be stored in the fridge for about a week or frozen for up to three months.
