Preparation
- Preheat your oven to 375F (190C) and lightly grease a baking sheet.
- Slice potatoes into wedges and place in a large bowl. Toss with olive oil to coat.
- In a small bowl, combine salt, garlic powder, and Italian seasoning.
- Sprinkle this mixture over the potato wedges along with the parmesan cheese, tossing well to coat evenly.
Cooking
- Arrange the seasoned wedges in a single layer on the baking sheet with skin sides down.
- Bake for 25 to 35 minutes until golden brown and fork tender.
- Optionally, garnish with fresh parsley before serving.
Notes
Cool completely on a wire rack before transferring to an airtight container. Refrigerate for up to 3 days. To re-crisp, warm on a baking sheet at 400F (200C) for 8–10 minutes. For longer storage, freeze in a single layer for up to 1 month.
