Ingredients
  

Cookie Base
  • 1.5 cups unsalted butter (softened)
  • 1.5 cups granulated sugar
  • 8 oz pkg. cream cheese (softened)
  • 2 large eggs
  • 2 tbsp lemon juice
  • 1.5 tsp lemon rind (grated)
  • 4.5 cups unbleached all-purpose flour Bleached flour toughens baked goods.
  • 1.5 tsp baking powder
Toppings
  • 1 cup apricot preserves Or as needed for filling.
  • 0.5 cup confectioners’ sugar For dusting on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, granulated sugar, and cream cheese until well blended.
  3. Add in the eggs, lemon juice, and lemon rind, and mix until combined.
  4. Gradually fold in the flour and baking powder until just mixed.
  5. Refrigerate the dough for at least one hour.
Baking
  1. Shape tablespoonfuls of dough into balls and place them on a greased cookie sheet.
  2. Make indents in the center of each ball using your thumb and fill with apricot preserves.
  3. Bake for about 15 to 20 minutes, rotating the sheets every six minutes for even browning.
  4. Once golden brown, remove from the oven and allow to cool before dusting with confectioners’ sugar.

Notes

These cookies shine best with a cup of tea or coffee. Store in an airtight container for up to a week or freeze for longer enjoyment. Use other fruit preserves like raspberry or peach for variations.
