Ingredients
  

For the Cake
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted vegan butter (or regular butter)
  • 1 cup unsweetened almond milk or oat milk (or regular milk)
  • 1/2 cup coconut sugar or light brown sugar
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp apple cider vinegar
  • 1 pinch salt
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1 1/2 cups regular or gluten-free all-purpose flour
  • 1/2 cup rolled oats
For the Frosting
  • 1 1/2 cups powdered sugar
  • 4 oz vegan cream cheese (or regular cream cheese)
  • 4 tbsp melted vegan butter (or regular butter)
  • 1 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the applesauce, melted vegan butter, almond milk, coconut sugar, and vanilla. Whisk gently until well blended.
  3. Add in the baking powder, baking soda, apple cider vinegar, and a pinch of salt. Then sprinkle in the maple syrup, cinnamon, nutmeg, and cloves.
  4. Gradually mix in the flour and rolled oats until everything is just combined—don't over-mix.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
Baking
  1. Pop it into the oven and let it bake for about 25-30 minutes, or until a toothpick comes out clean.
Frosting
  1. While the cake cools, prepare your frosting by blending the powdered sugar, vegan cream cheese, melted vegan butter, and cinnamon in a bowl until smooth and creamy.
  2. Once the cake is completely cool, drizzle the frosting on top.

Notes

Store leftover cake in an airtight container at room temperature for up to three days. For freshness, refrigerate for about a week. Consider adding chopped nuts on top for extra texture, diced apples, or caramel sauce for a festive touch.
