Ingredients
  

For the pie crust and filling
  • 1 piece broken or puff pastry Store-bought or homemade
  • 2 to 3 pieces apples Peeled and cored, variety could include Granny Smith or Honeycrisp
  • 100 g soft butter Should be at room temperature
  • 100 g sugar Granulated sugar
  • 100 g almond powder Ground almonds
  • 2 pieces eggs Large eggs
  • 1 tablespoon flour or maizena For added thickness
  • 1 teaspoon vanilla extract Optional for added flavor
  • to taste g icing sugar For dusting before serving, optional

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Take a tart or pie mold and lay your pastry down, gently poking the bottom with a fork.
Making the Filling
  1. In a mixing bowl, combine the soft butter and sugar until creamy.
  2. Add the eggs one by one, mixing well after each addition.
  3. Stir in the almond powder, flour, and optionally the vanilla extract.
  4. Spread the frangipane mixture evenly on the bottom of the pie crust.
Assembling the Pie
  1. Slice the apples into thin slats and arrange them on top of the frangipane.
  2. Place the pie in the oven and bake for about 30 to 35 minutes until golden brown.
Serving
  1. Let the pie cool before carefully removing it from the mold.
  2. Dust with icing sugar if desired and serve warm, optionally with ice cream or whipped cream.

Notes

For extra flavor, add a hint of cinnamon or nutmeg. Let the pie cool to set properly for easier slicing. Store leftovers in an airtight container for a day or two, though best enjoyed fresh.
