Preparation
- Preheat the oven to 375 degrees F. Generously butter a 9×13-inch baking dish.
- In a large bowl, combine the oats and milk. Let them rest together for 10 minutes.
- Peel, core, and dice the apples. Toss them with 2 tablespoons of maple syrup, cinnamon, and nutmeg.
- To the softened oats, whisk in the eggs, melted butter, maple syrup, vanilla extract, and lemon juice.
- In a separate bowl, whisk together the all-purpose flour, whole wheat pastry flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
- Gently fold the dry ingredients into the wet mixture until just combined. Fold in the apples.
Baking
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 35-40 minutes until the top is golden and set.
- Allow to cool for 10 minutes before slicing.
Serving
- Serve warm, drizzled with more maple syrup.
Notes
Use a mix of apples for better flavor. For a vegan version, substitute the eggs with a flaxseed mixture and switch to plant-based milk.
