  • 2 cups old-fashioned rolled oats
  • 1.5 cups whole milk Room temperature
  • 3 medium apples (Granny Smith or Honeycrisp) Peeled, cored, and diced
  • 1/3 cup maple syrup Plus more for serving
  • 3 large eggs Room temperature
  • 1/4 cup unsalted butter Melted and cooled
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.5 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat the oven to 375 degrees F. Generously butter a 9×13-inch baking dish.
  2. In a large bowl, combine the oats and milk. Let them rest together for 10 minutes.
  3. Peel, core, and dice the apples. Toss them with 2 tablespoons of maple syrup, cinnamon, and nutmeg.
  4. To the softened oats, whisk in the eggs, melted butter, maple syrup, vanilla extract, and lemon juice.
  5. In a separate bowl, whisk together the all-purpose flour, whole wheat pastry flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
  6. Gently fold the dry ingredients into the wet mixture until just combined. Fold in the apples.
Baking
  1. Pour the batter into the prepared baking pan and smooth the top.
  2. Bake for 35-40 minutes until the top is golden and set.
  3. Allow to cool for 10 minutes before slicing.
Serving
  1. Serve warm, drizzled with more maple syrup.

Notes

Use a mix of apples for better flavor. For a vegan version, substitute the eggs with a flaxseed mixture and switch to plant-based milk.
