  • 6 oz baby spinach
  • 1 Granny Smith apple, sliced
  • 1 Gala apple, sliced
  • 1 cup cashew nuts
  • 1/2 cup dried cranberries
Dressing Ingredients
  • 1/4 cup mayo
  • 1/3 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons honey or more, to taste

Method
 

Preparation
  1. In a large bowl, combine all salad ingredients, except for the salad dressing.
  2. In a mason jar, mix together the mayo, balsamic vinegar, Dijon mustard, lemon juice, and honey. Whisk until it all comes together.
  3. Drizzle the dressing over the tossed salad and give it a gentle toss. Serve immediately.

Notes

Toast the cashews lightly for more flavor, add thin slices of pear for extra sweetness, or swap mayo for Greek yogurt for a lighter option. This salad is versatile; consider adding feta cheese or grilled chicken.
