  • 1 1/2 tsp baking powder

Preparation
  1. In a mixing bowl, beat the eggs with sugar and vanilla until light, pale, and fluffy.
  2. Add the room-temperature butter and continue whisking until fully incorporated.
  3. In a separate bowl, whisk together the flour, cinnamon, baking powder, and a pinch of salt.
  4. Fold the dry ingredients into the wet mixture to form a thick and smooth cookie dough.
  5. Gently stir in the chopped apples until well mixed.
Baking
  1. Spoon generous dollops of dough onto a parchment-lined baking pan, spacing them out to allow for spreading.
  2. Preheat the oven to 350°F (180°C) and bake for about 20 minutes, until golden and fragrant.
