  • 300 g ANZAC biscuits Crushed into fine crumbs
  • 1/2 cup condensed milk Provides sweetness and moisture
  • 80 g butter, melted Ensure it's just melted to avoid cooking eggs
  • 2 pieces eggs Large eggs for the batter

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and grease six muffin cups.
  2. In a food processor, blitz the ANZAC biscuits into fine crumbs.
  3. Add the condensed milk, melted butter, and eggs to the crumbs, blending until you have a thick batter.
  4. Pour the batter into each muffin cup, filling just below halfway.
Baking
  1. Bake for 12-15 minutes until the tops are golden and the centers are soft.
Serving
  1. Serve warm, drizzled with golden syrup or with vanilla ice cream.

Notes

Store muffins in an airtight container at room temperature for up to three days or freeze for up to two months. Reheat in the oven to restore warmth. Add nuts or dried fruit for extra flavor.
