Ingredients
  

For the crust
  • 2 cups crushed frosted animal cookies
  • 1/4 cup unsalted butter, melted
For the cheesecake filling
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup fresh strawberry puree Can substitute with store-bought puree or jam
  • 1/2 cup heavy whipping cream, whipped to stiff peaks
  • a few drops pink food coloring (optional)
For decoration
  • Whipped cream for decorating
  • Strawberry sauce or caramel drizzle
  • Sprinkles for a festive touch
  • Extra frosted animal cookies for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan or line the bottom with parchment paper.
  2. In a mixing bowl, combine the crushed frosted animal cookies with melted butter until they resemble wet sand.
  3. Press this mixture firmly into the bottom of the pan and bake for 8-10 minutes until golden.
  4. Let the crust cool completely.
Cheesecake Mixture
  1. In another mixing bowl, beat the softened cream cheese until smooth and fluffy.
  2. Slowly add in the powdered sugar, vanilla extract, and fresh strawberry puree, blending until smooth.
  3. Gently fold in the whipped cream and add food coloring if desired.
Assembly
  1. Spread the cheesecake mixture over the cooled crust and smooth it out.
  2. Cover and refrigerate for at least 4 hours to set.
Decoration
  1. Once set, release from the pan and decorate with whipped cream, strawberry sauce, sprinkles, and extra frosted cookies.

Notes

Store leftovers tightly covered in the refrigerator for up to a week. Add sprinkles right before serving. For extra flavor, consider adding a touch of lemon zest.
