Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan or line the bottom with parchment paper.
- In a mixing bowl, combine the crushed frosted animal cookies with melted butter until they resemble wet sand.
- Press this mixture firmly into the bottom of the pan and bake for 8-10 minutes until golden.
- Let the crust cool completely.
Cheesecake Mixture
- In another mixing bowl, beat the softened cream cheese until smooth and fluffy.
- Slowly add in the powdered sugar, vanilla extract, and fresh strawberry puree, blending until smooth.
- Gently fold in the whipped cream and add food coloring if desired.
Assembly
- Spread the cheesecake mixture over the cooled crust and smooth it out.
- Cover and refrigerate for at least 4 hours to set.
Decoration
- Once set, release from the pan and decorate with whipped cream, strawberry sauce, sprinkles, and extra frosted cookies.
Notes
Store leftovers tightly covered in the refrigerator for up to a week. Add sprinkles right before serving. For extra flavor, consider adding a touch of lemon zest.
