Ingredients
  

For the crust
  • 2 cups crushed frosted animal cookies
  • 1/4 cup unsalted butter, melted
For the cheesecake filling
  • 16 oz cream cheese, softened to room temperature Let sit out for a while before mixing for a smoother filling
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup fresh strawberry puree For a sweeter filling, consider adding more strawberry puree
  • 1/2 cup heavy whipping cream, whipped to stiff peaks Should be fluffy for a dreamy texture
  • a few drops pink food coloring (optional) For added color
For decoration
  • Whipped cream, for decorating
  • Strawberry sauce or caramel drizzle
  • Sprinkles, for a festive touch
  • Extra frosted animal cookies, for garnish

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan or line the bottom with parchment paper.
  2. In a medium mixing bowl, combine the crushed frosted animal cookies with the melted butter, stirring until the mixture resembles wet sand.
  3. Press the cookie mixture firmly into the bottom of your pan to create a solid base. Bake the crust for 8 to 10 minutes, then set aside to cool completely.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy, about 2 to 3 minutes.
  2. Gradually add the powdered sugar, vanilla extract, and strawberry puree, mixing until everything is silky and perfectly blended.
  3. Gently fold in the whipped cream.
  4. If desired, add a few drops of pink food coloring for a dash of color.
Assembly
  1. Spread the cheesecake filling evenly over the cooled crust. Smooth the top with a spatula.
  2. Cover and chill in the refrigerator for at least 4 hours, or better yet, overnight.
Decorate and Serve
  1. Once chilled and set, carefully remove the cheesecake from the springform pan and place it on a serving plate.
  2. Pipe whipped cream around the edges, drizzle with strawberry sauce or caramel, and add sprinkles and additional frosted animal cookies for garnish.
  3. Slice and serve chilled.

Notes

Store any leftovers in an airtight container in the refrigerator for 3 to 5 days. It’s best enjoyed chilled.
