Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan or line the bottom with parchment paper.
- In a medium mixing bowl, combine the crushed frosted animal cookies with the melted butter, stirring until the mixture resembles wet sand.
- Press the cookie mixture firmly into the bottom of your pan to create a solid base. Bake the crust for 8 to 10 minutes, then set aside to cool completely.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy, about 2 to 3 minutes.
- Gradually add the powdered sugar, vanilla extract, and strawberry puree, mixing until everything is silky and perfectly blended.
- Gently fold in the whipped cream.
- If desired, add a few drops of pink food coloring for a dash of color.
Assembly
- Spread the cheesecake filling evenly over the cooled crust. Smooth the top with a spatula.
- Cover and chill in the refrigerator for at least 4 hours, or better yet, overnight.
Decorate and Serve
- Once chilled and set, carefully remove the cheesecake from the springform pan and place it on a serving plate.
- Pipe whipped cream around the edges, drizzle with strawberry sauce or caramel, and add sprinkles and additional frosted animal cookies for garnish.
- Slice and serve chilled.
Notes
Store any leftovers in an airtight container in the refrigerator for 3 to 5 days. It’s best enjoyed chilled.
