  • 1 cup butter, softened Ensure butter is at room temperature.
  • 2 cups granulated sugar
  • 2 pieces eggs Fresh eggs enhance flavor.
  • 2 cups buttermilk Can substitute with regular milk mixed with vinegar.
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
Cinnamon Swirl
  • 2/3 cup brown sugar
  • 2 tablespoons ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and generously grease two 9×5-inch loaf pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the buttermilk until well combined.
  5. In another bowl, whisk together the flour and baking soda.
  6. Gradually add the dry mixture to the wet one, mixing gently until just combined.
  7. In a smaller bowl, mix the brown sugar and cinnamon together.
Baking
  1. Pour 1/4 of the batter into each pan, then sprinkle 1/4 of the cinnamon mixture on top.
  2. Add the remaining batter and top with the rest of the cinnamon mixture.
  3. Gently swirl through the batter with a knife to create marbled patterns.
  4. Bake for 45–50 minutes until a toothpick inserted in the center comes out clean.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or honey. Wrap in plastic wrap to keep fresh for up to a week, or freeze slices for later.
