Preparation
- Preheat your oven to 350°F (175°C) and generously grease two 9×5-inch loaf pans.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the buttermilk until well combined.
- In another bowl, whisk together the flour and baking soda.
- Gradually add the dry mixture to the wet one, mixing gently until just combined.
- In a smaller bowl, mix the brown sugar and cinnamon together.
Baking
- Pour 1/4 of the batter into each pan, then sprinkle 1/4 of the cinnamon mixture on top.
- Add the remaining batter and top with the rest of the cinnamon mixture.
- Gently swirl through the batter with a knife to create marbled patterns.
- Bake for 45–50 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter or honey. Wrap in plastic wrap to keep fresh for up to a week, or freeze slices for later.
