  • 1 cup almond flour High-quality almond flour is recommended.
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
Filling Ingredients
  • 1 cup mascarpone cheese Can substitute with cream cheese mixed with heavy cream and sugar.
  • 1/2 cup powdered sugar
  • sliced almonds for garnish Optional, for decoration.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and line a 9-inch cake pan.
  2. In a bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Beat each egg in one at a time, followed by adding vanilla extract.
  4. In a separate bowl, whisk together almond flour, all-purpose flour, and baking powder.
  5. Gradually add the dry mixture to the wet ingredients, blending until smooth.
  6. Pour the batter into the prepared cake pan and bake for 25 to 30 minutes, or until golden.
Assembly
  1. Once the cake cools completely, carefully slice it horizontally.
  2. In a mixing bowl, beat the mascarpone cheese with powdered sugar until smooth.
  3. Spread the mascarpone mixture between the layers of your cake.
  4. Garnish with sliced almonds and dust with powdered sugar if desired.

Notes

Allow the torte to cool completely before slicing to prevent it from falling apart. Store leftover torte in an airtight container in the refrigerator for 3-4 days.
