  • 2 Tablespoons Ground Flax
  • 2 Tablespoons Water To bloom the flax.
  • 1 cup Old Fashioned Oats Use for the best chew.
  • 1/4 cup Almond Butter Stir until creamy.
  • 1/4 cup Maple Syrup
  • 1 Tablespoon Brewer's Yeast Contributes lactation support.
  • 2 Tablespoons Shredded Coconut Plus more for garnish.
  • 1/4 cup Vegan Chocolate Chips

Method
 

Preparation
  1. In a small bowl, mix together 2 tablespoons ground flax with 2 tablespoons water and allow the mixture to sit for 5 minutes.
  2. In a medium-sized mixing bowl, stir together 1 cup old-fashioned oats, 1/4 cup almond butter, 1/4 cup maple syrup, 1 tablespoon brewer's yeast, 2 tablespoons shredded coconut, the ground flax mixture, and 1/4 cup chocolate chips.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  4. Scoop and roll the mixture into 1-inch sized balls.
  5. Optional: Roll the bites in shredded coconut and drizzle with melted vegan chocolate.

Notes

For best results, use old-fashioned oats and a sticky texture when rolling. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
