Preparation
- In a small bowl, mix together 2 tablespoons ground flax with 2 tablespoons water and allow the mixture to sit for 5 minutes.
- In a medium-sized mixing bowl, stir together 1 cup old-fashioned oats, 1/4 cup almond butter, 1/4 cup maple syrup, 1 tablespoon brewer's yeast, 2 tablespoons shredded coconut, the ground flax mixture, and 1/4 cup chocolate chips.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
- Scoop and roll the mixture into 1-inch sized balls.
- Optional: Roll the bites in shredded coconut and drizzle with melted vegan chocolate.
Notes
For best results, use old-fashioned oats and a sticky texture when rolling. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
