Ingredients
  

For the crust
  • 1 1/2 cups almond flour
  • 1/3 cup unsalted butter, melted
  • 2 tbsp granulated sugar
For the cheesecake filling
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 2 eggs
For the chocolate layer
  • 1 1/2 cups dark chocolate chips
  • 1/4 cup heavy cream
For the ganache and toppings
  • 1/2 cup caramel sauce
  • 1/4 cup heavy cream
  • sliced bananas
  • chopped roasted almonds
  • additional caramel sauce for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, melted butter, and sugar. Press this mixture firmly into the bottom of a springform pan.
  3. Bake for about 10 minutes until it’s just set and slightly firm.
Chocolate Layer
  1. Melt the dark chocolate chips with the heavy cream until smooth.
  2. Spread the chocolate mixture over the cooled crust and chill in the fridge.
Cheesecake Filling
  1. In another bowl, beat together the softened cream cheese, sugar, mashed bananas, and vanilla until smooth.
  2. Add the eggs one at a time, beating well after each addition.
  3. Pour the mixture over the chilled chocolate layer.
  4. Bake for around 50 minutes, then let cool before refrigerating for at least three hours to set.
Ganache and Topping
  1. Heat the caramel sauce and cream until melded into a silky sauce.
  2. Spread the ganache over the chilled cheesecake, then top with sliced bananas and chopped roasted almonds.
  3. Drizzle with additional caramel sauce.

Notes

Use ripe bananas for sweetness. Chill well to allow flavors to meld. Experiment with different toppings.
