Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, melted butter, and sugar. Press this mixture firmly into the bottom of a springform pan.
- Bake for about 10 minutes until it’s just set and slightly firm.
Chocolate Layer
- Melt the dark chocolate chips with the heavy cream until smooth.
- Spread the chocolate mixture over the cooled crust and chill in the fridge.
Cheesecake Filling
- In another bowl, beat together the softened cream cheese, sugar, mashed bananas, and vanilla until smooth.
- Add the eggs one at a time, beating well after each addition.
- Pour the mixture over the chilled chocolate layer.
- Bake for around 50 minutes, then let cool before refrigerating for at least three hours to set.
Ganache and Topping
- Heat the caramel sauce and cream until melded into a silky sauce.
- Spread the ganache over the chilled cheesecake, then top with sliced bananas and chopped roasted almonds.
- Drizzle with additional caramel sauce.
Notes
Use ripe bananas for sweetness. Chill well to allow flavors to meld. Experiment with different toppings.
