Potato Preparation
  • 2 lbs Yukon Gold Potatoes, washed and sliced into ¼-inch slices
Seasoning
  • 2 tablespoons oil (such as olive oil or avocado oil) Use oils with a higher smoke point for better flavor.
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon black pepper
Garnish (Optional)
  • to taste Chives, chopped Or use your favorite fresh herb such as parsley.

Method
 

Preparation
  1. Preheat air fryer to 400°F.
  2. Place Yukon Gold Potatoes cut into ¼-inch slices in a medium mixing bowl.
  3. Add oil, kosher salt, garlic powder, dried Italian seasoning, and black pepper. Gently mix to coat the potatoes.
Cooking
  1. When the air fryer is preheated, open the air fryer and pour the potatoes into the basket in a single layer, allowing for slight overlap.
  2. Air fry at 400°F for 15-20 minutes until golden brown and fork tender, shaking the basket halfway through.
  3. Remove the potatoes from the air fryer to a serving dish and garnish with chopped chives or fresh herbs if desired.

Notes

Serve warm, piled on a platter, and consider adding a squeeze of lemon or a dusting of sea salt before serving. Cool completely before storing in an airtight container for up to 3 days.
