Ingredients
  

Zucchini Fries
  • 2 medium medium zucchinis Pat dry before breading
  • 1 cup grated Parmesan cheese Use fine for better melt
  • 1 cup breadcrumbs Fine breadcrumbs recommended
  • 1 teaspoon garlic powder Add more for extra flavor
  • Salt and pepper to taste Season well
  • Olive oil spray Lightly spray for crisping

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchinis into fry shapes.
  3. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
Cooking
  1. Dip each zucchini fry in the mixture until well coated.
  2. Place the fries in the air fryer basket in a single layer.
  3. Spray lightly with olive oil.
  4. Air fry for about 10-12 minutes, shaking halfway through, until golden and crispy.

Notes

Let leftovers cool, then refrigerate for up to 3 days. To re-crisp, warm in the air fryer at 350°F for 3-5 minutes. For best results, do not overcrowd the basket and use fine breadcrumbs.
