  • 2 medium medium zucchini Pat dry before breading.
  • 1 cup breadcrumbs Panko breadcrumbs recommended for a lighter texture.
  • 1/2 cup grated Parmesan cheese Can be substituted with Pecorino Romano for a sharper flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • as needed Cooking spray For coating the air fryer basket.

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchini into fries.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Dip each zucchini fry into the breadcrumb mixture, ensuring it is well-coated.
Cooking
  1. Spray the air fryer basket with cooking spray and arrange the zucchini fries in a single layer.
  2. Cook for 10-12 minutes or until golden and crispy, shaking the basket halfway through.
  3. Serve hot immediately.

Notes

Serve on a warm platter with a drizzle of lemon-infused yogurt or marinara for added flavor. To store, cool completely before placing in an airtight container lined with paper towel for up to 2 days.
