  • 2 medium zucchinis Cut into fry-shaped pieces.
  • 1 cup grated Parmesan cheese Use fresh for best flavor.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs if needed.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Add cayenne for heat if desired.
  • to taste Salt and pepper
  • as needed Olive oil spray For spritzing the fries.

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchinis into fry-shaped pieces.
  3. In a bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. Dredge the zucchini pieces in the cheese mixture until well coated.
  5. Lightly spray the air fryer basket with olive oil.
  6. Place the coated zucchini fries in the basket in a single layer.
  7. Spray the tops lightly with olive oil.
Cooking
  1. Cook for about 10-12 minutes, flipping halfway, until golden and crispy.
Serving
  1. Serve hot with a trio of dipping sauces: lemon-garlic aioli, smoky harissa yogurt, or classic marinara.

Notes

Pat the zucchini dry before coating for better adhesion. Don't overcrowd the basket to ensure even browning. Use fresh Parmesan for the best texture.
