Ingredients
  

Pudding Ingredients
  • 200 g mixed dried fruit Use good-quality mixed dried fruit; soak in brandy or orange juice for plumper bites.
  • 50 g breadcrumbs Lightly grease and dust ramekins with breadcrumbs for easier unmolding.
  • 50 g brown sugar
  • 50 g shredded suet or butter Can replace with vegan butter or shredded coconut oil.
  • 1 medium egg Can substitute with a flax egg for a vegan option.
  • 1 tsp mixed spice
  • 1 tbsp brandy or orange juice Brandy gives a deeper flavor; can use orange juice.

Method
 

Mix Ingredients
  1. Mix dried fruit, breadcrumbs, sugar, suet, mixed spice, and brandy in a bowl.
  2. Beat the egg and stir it into the mixture.
Prepare Ramekins
  1. Grease four small ramekins and divide the mixture evenly among them.
  2. Cover each ramekin with foil.
Cooking
  1. Place the ramekins in the air fryer basket.
  2. Cook at 160°C for 25-30 minutes.
  3. Check if cooked by inserting a skewer; it should come out clean.
Serving
  1. Serve warm with a generous spoonful of warm custard or a dollop of whipped cream.
  2. Optional: Add bourbon caramel or toasted pecans for extra flavor.

Notes

Let puddings cool at room temperature, then cover with plastic wrap or transfer to an airtight container. They keep in the fridge for up to 3 days or can be frozen for 1 month. Reheat gently in the microwave or air fryer.
