Preparation
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine sliced carrots and diced potatoes.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
Cooking
- Place the mixture in the air fryer basket in a single layer.
- Cook for about 15-20 minutes, shaking the basket halfway through for even cooking, until the veggies are crispy and tender.
- Remove from the air fryer and garnish with fresh parsley before serving.
Notes
Allow vegetables to cool before storing in an airtight container. They will keep in the refrigerator for up to 3–4 days. Reheat gently in the air fryer at 350°F (175°C) for 5–7 minutes.
