- In a mixing bowl, combine the pumpkin puree and powdered sugar, stirring gently until smooth.
- Melt the white chocolate chips in the microwave or a double boiler, stirring until silky and smooth.
- Fold the melted chocolate into the pumpkin mixture until fully blended.
Setting
- Pour the mixture into a greased or parchment-lined baking dish, smoothing it out with a spatula.
- Cover and refrigerate for at least 2 hours until set.
- Once firm, cut into squares and serve.
Notes
For extra warmth, add nutmeg or cinnamon to the mixture. You can also top with chopped nuts or mini marshmallows before it sets. Store in an airtight container in the refrigerator for up to a week.
