  • 1 1/2 cups 60% dark or higher chocolate about 270g
  • 3/4 cup THICK coconut yogurt or Greek-style yogurt Ensure yogurt is thick for best consistency
  • a pinch sea salt Optional for enhancing flavor
  • 1 tsp vanilla extract Adds extra flavor

  • chopped nuts For added texture
  • dried fruit For sweetness

Method
 

Preparation
  1. Line a small baking dish (around 6×6 inches) with parchment paper, leaving some edges hanging over the sides for easy lifting.
  2. Break the chocolate into small pieces and place it in a microwave-safe bowl or use a double boiler.
  3. Melt the chocolate in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  4. Stir in the thick yogurt until well blended, creating a creamy mixture.
  5. Add the vanilla extract and a pinch of sea salt. If desired, fold in any optional add-ins.
Setting
  1. Pour the mixture into the prepared baking dish and spread it evenly with a spatula.
  2. Place the dish in the fridge and chill for at least 2 hours until set.
  3. Once set, lift the fudge out using the parchment paper and cut into squares.

Notes

Store in an airtight container in the fridge to keep fresh. Best enjoyed within a week.
