Description

A delicious and healthy zucchini tomato pasta dish that celebrates fresh flavors and is easy to make.


Ingredients

Scale
  • 200g spaghetti or linguine
  • 1 medium zucchini, sliced into half-moons
  • 2 cups diced tomatoes or 1 can crushed tomatoes
  • 3 garlic cloves, minced
  • 2 ½ cups vegetable broth
  • 2 tbsp olive oil
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. In a large pot, combine the pasta, zucchini, tomatoes, garlic, broth, olive oil, and oregano.
  2. Bring to a boil, then reduce heat to a simmer. Stir occasionally to prevent sticking.
  3. Cook until the pasta is al dente and most of the liquid has been absorbed (10-12 minutes). Season with salt and pepper.
  4. Garnish with fresh herbs and grated cheese, if desired.

Notes

For a creamy version, stir in ½ cup of heavy cream during the last step. For a spicy kick, add red chili flakes while cooking.
