- 1 whole chicken, cut into pieces
- 1 cup buttermilk
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cayenne pepper
- 2 cups all-purpose flour
- 1 cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- Combine buttermilk, garlic, paprika, and cayenne in a bowl. Marinate the chicken pieces in this mixture for at least 1 hour.
- In a separate bowl, mix the flour and seasoning.
- Dredge the marinated chicken in flour, then dip in the buttermilk again, and coat with panko breadcrumbs.
- Heat oil in a deep fryer or heavy-duty pot to 350°F (175°C).
- Fry the chicken pieces in batches until golden brown and cooked through, about 10-15 minutes.
- For extra crispiness, double-fry the chicken: fry it once, remove it, let it rest, then fry again for 2-3 minutes.
- Drain on paper towels and serve hot.
