Zach Choi’s legendary fried chicken features a golden, ultra-crispy crust with a tender, juicy interior, achieved through a double-frying method and a flavorful marinade.


Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup buttermilk
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 2 cups all-purpose flour
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Combine buttermilk, garlic, paprika, and cayenne in a bowl. Marinate the chicken pieces in this mixture for at least 1 hour.
  2. In a separate bowl, mix the flour and seasoning.
  3. Dredge the marinated chicken in flour, then dip in the buttermilk again, and coat with panko breadcrumbs.
  4. Heat oil in a deep fryer or heavy-duty pot to 350°F (175°C).
  5. Fry the chicken pieces in batches until golden brown and cooked through, about 10-15 minutes.
  6. For extra crispiness, double-fry the chicken: fry it once, remove it, let it rest, then fry again for 2-3 minutes.
