Ingredients

1 ½ cups (190g) all-purpose flour

1 cup (200g) granulated sugar

½ cup (120g) plain yogurt (full-fat preferred)

½ cup (120ml) vegetable oil

2 large eggs

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp vanilla extract

1 tbsp lemon zest (optional for extra flavor)

Glaze (Optional):

½ cup (60g) powdered sugar

1 tbsp lemon juice or milk


Instructions

 

  1. Preheat & Prepare

    • Preheat your oven to 350°F (175°C).

    • Grease and line an 8-inch round cake pan with parchment paper.

  2. Mix Dry Ingredients

    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Prepare Wet Ingredients

    • In a separate large bowl, whisk eggs and sugar until light and creamy.

    • Add yogurt, oil, vanilla extract, and lemon zest (if using) and mix until well combined.

  4. Combine & Make Batter

    • Gradually add the dry ingredients into the wet mixture, stirring gently until smooth. Do not overmix!

  5. Bake the Cake

    • Pour the batter into the prepared cake pan.

    • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

  6. Cool & Glaze (Optional)

    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

    • If adding a glaze, mix powdered sugar with lemon juice or milk and drizzle over the cooled cake.
