Ingredients
1 ½ cups (190g) all-purpose flour
1 cup (200g) granulated sugar
½ cup (120g) plain yogurt (full-fat preferred)
½ cup (120ml) vegetable oil
2 large eggs
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp vanilla extract
1 tbsp lemon zest (optional for extra flavor)
Glaze (Optional):
½ cup (60g) powdered sugar
1 tbsp lemon juice or milk
Instructions

Preheat & Prepare

Preheat your oven to 350°F (175°C).

Grease and line an 8-inch round cake pan with parchment paper.

Mix Dry Ingredients

In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

Prepare Wet Ingredients

In a separate large bowl, whisk eggs and sugar until light and creamy.

Add yogurt, oil, vanilla extract, and lemon zest (if using) and mix until well combined.

Combine & Make Batter

Gradually add the dry ingredients into the wet mixture, stirring gently until smooth. Do not overmix!

Bake the Cake

Pour the batter into the prepared cake pan.

Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Cool & Glaze (Optional)

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

If adding a glaze, mix powdered sugar with lemon juice or milk and drizzle over the cooled cake.
