Description

These Garlic Herb Roasted Yukon Gold Potatoes are crispy on the outside, buttery soft on the inside, and packed with flavor. Ingredients

2 lbs Yukon Gold potatoes, cut into wedges

3 tbsp olive oil

3 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

1/2 tsp smoked paprika

1/4 cup freshly grated Parmesan cheese (optional)

1 tbsp fresh parsley, chopped (for garnish)


Instructions

 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, toss the Yukon Gold potatoes with olive oil, minced garlic, salt, black pepper, oregano, thyme, and smoked paprika.

  3. Spread the potatoes in a single layer on the prepared baking sheet.

  4. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.

  5. If using, sprinkle with Parmesan cheese in the last 5 minutes of roasting.

  6. Remove from oven, garnish with fresh parsley, and serve hot.
