Ingredients
2 lbs Yukon Gold potatoes, cut into wedges
3 tbsp olive oil
3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1/2 tsp smoked paprika
1/4 cup freshly grated Parmesan cheese (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the Yukon Gold potatoes with olive oil, minced garlic, salt, black pepper, oregano, thyme, and smoked paprika.

Spread the potatoes in a single layer on the prepared baking sheet.

Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.
