These soft and chewy Reese’s Peanut Butter Cup Cookies are packed with rich peanut butter, chocolate, and a melt-in-your-mouth texture. Perfect for any occasion!
Ingredients
1 stick butter, softened
1/2 cup packed light brown sugar
1/2 cup white sugar
1/2 cup peanut butter
1 egg
1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
12 mini Reese’s Peanut Butter Cups, chopped
Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Cream Butter & Sugars
In a large mixing bowl, beat butter, brown sugar, and white sugar until light and fluffy.
3. Add Peanut Butter, Egg & Vanilla
Mix in peanut butter, egg, and vanilla extract until well combined.
4. Combine Dry Ingredients
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients.
5. Fold in Reese’s
Gently fold in chopped Reese’s Peanut Butter Cups.
6. Chill Dough (Optional)
For thicker cookies, chill the dough for 30 minutes.
7. Scoop & Bake
Scoop dough onto the prepared baking sheet. Bake for 10–12 minutes, or until golden brown.
8. Cool & Enjoy
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Enjoy warm or store for later!
