2 large eggs

1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Oven & Pan

  1. Preheat the oven to 350°F (175°C).

  2. Grease a 9-inch round cake pan or 8×4-inch loaf pan with butter or oil and line it with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together:

    • Flour

    • Baking powder

    • Baking soda

    • Salt

Step 3: Mix the Wet Ingredients

  1. In a large mixing bowl, whisk:

    • Yogurt

    • Sugar

    • Oil

    • Eggs

    • Vanilla extract

    • (Optional) Lemon zest

  2. Mix until smooth and well combined.

Step 4: Combine Wet & Dry Ingredients

  1. Gradually fold the dry ingredients into the wet mixture using a spatula. Do not overmix—stir until just combined.

  2. (Optional) Gently fold in berries, chocolate chips, or nuts.

Step 5: Bake the Cake

  1. Pour the batter into the prepared pan and smooth the top.

  2. Bake for 35-40 minutes (for a round pan) or 50-55 minutes (for a loaf pan).

  3. Insert a toothpick into the center—if it comes out clean, the cake is done.

Step 6: Cooling & Serving
