Description
Irresistible quesadillas filled with slow-cooked chicken, creamy queso, and zesty seasonings, all wrapped in crispy tortillas.
Ingredients

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup queso dip
- 4 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- Optional: diced tomatoes, corn, green chiles, jalapeños
Instructions
- Place chicken in the slow cooker and sprinkle taco seasoning over the top.
- Pour salsa over the chicken and then add the queso dip.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is tender.
- Shred chicken in the pot with forks and mix with the queso and salsa.
- Spread shredded chicken mixture onto half of a tortilla and top with cheese, then fold.
- Heat a skillet over medium heat and cook each quesadilla for 2-3 minutes on each side until golden brown and crispy.
Notes
For the best cheese consistency, stir the queso occasionally while cooking. Add a splash of milk if it thickens too much after cooking.
