Crockpot Queso Chicken Quesadillas

Description

Irresistible quesadillas filled with slow-cooked chicken, creamy queso, and zesty seasonings, all wrapped in crispy tortillas.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup queso dip
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • Optional: diced tomatoes, corn, green chiles, jalapeños

Instructions

  1. Place chicken in the slow cooker and sprinkle taco seasoning over the top.
  2. Pour salsa over the chicken and then add the queso dip.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is tender.
  4. Shred chicken in the pot with forks and mix with the queso and salsa.
  5. Spread shredded chicken mixture onto half of a tortilla and top with cheese, then fold.
  6. Heat a skillet over medium heat and cook each quesadilla for 2-3 minutes on each side until golden brown and crispy.

Notes

For the best cheese consistency, stir the queso occasionally while cooking. Add a splash of milk if it thickens too much after cooking.
