A warm and creamy broccoli cheddar soup made effortlessly in a Crock Pot, perfect for comfort on busy days.
Ingredients

- 2 cups fresh broccoli florets
- 2 cups sharp cheddar cheese, shredded
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
- Optional: smoked paprika, shredded carrots, crumbled bacon
Instructions
- Rinse and chop broccoli into bite-sized pieces, including the stems.
- Add broccoli, broth, onion, garlic, and seasonings to the Crock Pot.
- Set to low and cook for 4-6 hours until the broccoli is tender.
- Use an immersion blender to blend the soup to your desired consistency.
- In a saucepan, melt butter and whisk in flour to create a roux. Gradually add cream until thickened.
- Stir the roux into the soup and fold in the cheddar cheese off the heat.
- Serve hot and enjoy!
Notes
For a vegan version, substitute cream with coconut milk and cheddar with nutritional yeast. For gluten-free, use cornstarch instead of flour.
