Ingredients

  • 1 cup pecan halves
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat. Add the brown sugar and stir until combined. Cook for about 2 minutes until it starts to bubble. Remove from heat and pour this mixture into a round cake pan.
  3. Sprinkle the pecan halves over the caramel in the cake pan.
  4. In a bowl, mix the flour, baking powder, and salt together.
  5. In another bowl, beat the eggs and granulated sugar until light and fluffy. Add the vanilla extract and milk, mixing well.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the cake batter over the pecans in the cake pan.
  8. Bake for 30-35 minutes, or until a toothpick comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes. Then, carefully flip it onto a serving plate.

Notes

For a more intense flavor, toast the pecans before adding. Watch the caramel closely to avoid burning.
